Ode to Breakfast

I love breakfast foods. I could eat them all day.

The first is Mom Rodman's Holiday egg casserole. I'm not sure what's in it, I have the recipe somewhere but it is delicious. Every holiday she cooks it up for the family. I would bribe her to leave out the mushrooms but because she won't I just pick around them. Thankfully I get this breakfast every holiday and I don't even have to cook.

Gingerbread waffles are another Holiday favorite. They taste just like Christmas and even Pat likes them! The recipe is by Rachel Ray and maybe I'll Post it this year when I make them.


Regular waffles I make when visiting my parents has to be on the list of breakfast favorites and while I don't make them all the time it's not a holiday recipe so I make them more often. I like making them with whole wheat flour and strawberry topping. My mom even freezes the leftover to eat after I have gone home. Thought she isn't a strawberry fan so she eats them plain.

My go to weekend breakfast is a supped up scrambled egg. That's eggs scrambled with ham potatoes and veggies. Another breakfast pat will eat and actually enjoy. It's quick easy and delish.

Anyway I just enjoyed my breakfast and wanted to share my favorites. let me know what yours are (maybe I'll try them).
